Instructions

  • 1.   Preheat the oven to 190°C (375°F).
  • 2.   In a baking dish, squeeze the lemons, add the mustard and 10 cl (1/3 cup) of peanut oil. Season with salt and pepper.
  • 3.   In the same dish, coat your chicken pieces and bake for 1 hour, turning them every 15 minutes.
  • 4.   Meanwhile, peel and slice the onions. Simmer them in a thick-bottomed saucepan with 2 tablespoons of peanut oil until they are very tender.
  • 5.   Remove the chicken pieces and pour the cooking juices into the sautéed onions. Serve with rice and the onion compote.
