Pineapple Chicken Stir-Fry

Instructions

  • 1.   Cut the chicken into small cubes and coat them with the 3 tablespoons of flour (here's a little trick: put them in a bag with the flour and shake).
  • 2.   Cut the bell pepper into strips, chop the garlic, chives, and ginger, and cut the pineapple slices into pieces.
  • 3.   In the wok, heat the 3 tablespoons of oil and brown the floured chicken over high heat. Reduce the heat and add the garlic, 1/2 bell pepper, ginger, chives, tablespoon of vinegar, 2 tablespoons of tomato paste, 2 tablespoons of soy sauce, and the potato starch or cornstarch diluted in the juice from the pineapple can.
  • 4.   Simmer for 2 to 3 minutes while stirring, then add the pineapple pieces.
  • 5.   Let it cook for a few more minutes.
  • 6.   Serve with basmati rice.

  • 3 tablespoon of flour
