Mascarpone Pear Caramel Verrine

Instructions

  • 1.   Separate the egg whites from the yolks.
  • 2.   Beat the egg whites with a pinch of salt until they are very firm. Add the sugar and beat until you obtain a shiny meringue.
  • 3.   In a bowl, pour the mascarpone, vanilla sugar, and egg yolks: beat everything together with a whisk.
  • 4.   Add the meringue to this bowl and mix well.
  • 5.   Crumble the cookies. Cut the pears into small pieces.
  • 6.   Fill the verrines as follows: mascarpone - cookie - fruit - caramel, and repeat the same process until the verrine is filled to the top.
