1. Preheat the oven to 190°C (375°F).
2. Rinse and pat dry the salmon fillets. In a baking dish, pour the white wine and add the shallot, then place the fish fillets on top. Bake for 10 minutes.
3. Drain the mango pieces. Set aside a nice piece and blend the rest.
4. Dissolve the hollandaise sauce in 20cl (3/4 cup) of hot water and 20g (1.5 tablespoons) of butter. Add the lemon juice. Mix and heat for 3 minutes over low heat. Add the blended mango, season with salt and pepper.
5. On warm plates, serve a portion of salmon, drizzle with sauce, and garnish with one or two pieces of mango.
