Leek, Chorizo, and Mascarpone Pasta

Instructions

  • 1.   Cook the pasta according to the package instructions.
  • 2.   While the pasta is cooking, finely slice the leek and cut the chorizo into rounds.
  • 3.   Heat a drizzle of olive oil over high heat in a pan and add the leek. Season with salt, pepper, crumble the bouillon, and add a bit of thyme. Mix well and let cook for 2/3 minutes over medium heat.
  • 4.   Push the leek to the sides and add the chorizo in the center. Sear over high heat for 1 minute and then reduce the heat.
  • 5.   Add the mascarpone, mix everything together, and let simmer over low heat until the pasta is ready.
  • 6.   Plate the dish and serve hot.

  • 2 tablespoon of mascarpone
  • ½ vegetable bouillon cubes
