Express Cantonese Rice

Instructions

  • 1.   Cook the rice in a large pot of boiling salted water according to the package instructions.
  • 2.   Once cooked, drain it well and let it cool in a container.
  • 3.   Beat the egg with salt and pepper in a bowl to make an omelette.
  • 4.   Cook the peas for 10 minutes in a pot of boiling water to soften them.
  • 5.   Drain the peas and set aside.
  • 6.   Cook the beaten egg in a non-stick pan to make an omelette. Set aside off the heat.
  • 7.   Peel and finely chop the onion.
  • 8.   Heat olive oil in a pot and sauté the onion until golden.
  • 9.   Then add all the ingredients to the pot - rice, peas, omelette, ham, and onion - over high heat, mixing well.
  • 10.   Drizzle with soy sauce, adjust the seasoning, and mix once again.
  • 11.   Serve hot.
