Beef Meatball Curry with Pilaf Rice

Instructions

  • 1.   1. Preheat the oven to 425°F (220°C).
  • 2.   2. Mix 10.5 oz (300 g) of ground beef, 1/2 finely chopped onion, 1 tablespoon of chopped cilantro, 1/2 beaten egg, and 1 small slice of bread soaked in milk and crumbled. Season with salt and pepper.
  • 3.   3. Shape the meat mixture into walnut-sized meatballs and bake for 15 minutes in the oven.
  • 4.   4. Sauté 1/2 sliced onion in 1 tablespoon of oil. Add 1 teaspoon of curry paste, 1 tablespoon of curry powder, and a pinch of turmeric. Season with salt. Add 1 can of coconut milk (14 oz/400 ml) and simmer for 5 minutes.
  • 5.   5. Add the beef meatballs.
  • 6.   6. Serve with pilaf rice and sprinkle with 1 tablespoon of chopped cashews.
