Maple Rutabaga Velouté

Instructions

  • 1.   Sauté the vegetables in the fat, over low heat, for a few minutes.
  • 2.   Then, add the chicken broth. Season lightly. And bring to a boil, 20 minutes in a pressure cooker.
  • 3.   Once the vegetables are cooked, blend them and transfer everything to a saucepan, over low heat.
  • 4.   Adjust the flavor and consistency as desired (add more liquid, or reduce over low heat).
  • 5.   Then, add the maple syrup and cream. Taste and adjust the seasoning.

  • 2 tablespoon of oil
  • 250 g of potato
  • 1 onion
  • 1 leek
  • 100 g of celery root
  • 1.5 liter of chicken broth
  • 20 cl of heavy cream
  • 1 glass of maple syrup
