Instructions

  • 1.   Sauté the mushrooms for 7 minutes over high heat in 10g of butter, season with salt and pepper.
  • 2.   Put the remaining butter (50g) in a sauté pan, when it is very hot, sauté the kidney cut into thin slices for about 15 minutes.
  • 3.   Sprinkle with flour, let it brown while stirring, add the Madeira, broth, mustard, season with salt and pepper, bring to a boil.
  • 4.   Add the mushrooms and cooking juices, sprinkle with parsley.
  • 5.   Serve immediately.

  • 10 cl of beef broth
  • 5 tablespoon of Madeira
