Instructions

  • 1.   Lightly brush the meat with oil on both sides.
  • 2.   Spread the crushed pepper on a plate. Place the meat on top. Press firmly so that the pepper adheres well.
  • 3.   Flip the meat and repeat the same process to cover the other side.
  • 4.   Heat the butter in a pan. Cook the steak for 2 to 4 minutes on each side, depending on how well-done you like the meat.
  • 5.   Remove it from the pan. Place it on a heated plate. Cover it with another plate to keep it warm and let it rest.
  • 6.   Pour the cognac into the pan. Bring it to a boil, then flambé it. Turn off your hood before flambéing the cognac.
  • 7.   When the flames are extinguished, pour the cream into the pan. Bring it to a boil. Stir it with a wooden spoon. Let it reduce while scraping the bottom of the pan with a spatula to release the cooking juices.
  • 8.   Season the beef steak with salt.
  • 9.   Pour the sauce over the steak and serve immediately. Serve with golden potato balls and sugar snap peas.
