"Lyonnais Salad Bowl" with Smoked Herring and Lentils

Instructions

  • 1.   Cook the lentils in a pot of unsalted cold water with bay leaves and cloves pierced into an onion. Once boiling, cook for 35 minutes.
  • 2.   minutes before the end, add a tablespoon of coarse salt.
  • 3.   Drain, remove the bay leaves and cloves, cut the cooked onion into cubes, then let it cool slightly.
  • 4.   Boil the eggs for 8 minutes in boiling water, then peel and cut them into cubes.
  • 5.   Cut the herring into bite-sized pieces. Dice the remaining onion and slice the pickles.
  • 6.   Prepare the sauce, then mix everything into the cooled or slightly warm lentils (but not hot). Serve immediately (or refrigerate for up to 24 hours).

  • 4 smoked herring
  • 2 onions
  • 8 pickles
  • 3 cloves
  • 1 leaf of bay leaf
  • salt (according to taste)
  • pepper (according to taste)
