Instructions
1. Steam the diced potatoes and carrots.
2. Sauté one onion and 2 minced garlic cloves in a Dutch oven with 1 tablespoon of oil, add the potatoes and carrots. Stir in the curry, tomato paste, and corn.
3. Simmer for 10 minutes with the coconut milk and broth.
4. Cook for 5 to 10 minutes with the fish (over low heat), sprinkle with cilantro.
