Fish Columbo

Instructions

  • 1.   Steam the diced potatoes and carrots.
  • 2.   Sauté one onion and 2 minced garlic cloves in a Dutch oven with 1 tablespoon of oil, add the potatoes and carrots. Stir in the curry, tomato paste, and corn.
  • 3.   Simmer for 10 minutes with the coconut milk and broth.
  • 4.   Cook for 5 to 10 minutes with the fish (over low heat), sprinkle with cilantro.

  • 800 g of fish fillet
  • 400 g of potato
  • 400 g of carrot
  • 1 cup of corn (small can)
  • 2 pinch of garlic
  • 1 medium onion
  • 2 tablespoon of tomato paste
  • 25 cl of bouillon cube
  • 20 cl of coconut milk
  • 1 bunch of fresh coriander
  • 1 tablespoon of curry powder
  • 1 tablespoon of oil
  • salt (according to taste)
  • pepper (according to taste)
