Instructions

  • 1.   Make a shortcrust pastry using 375 g of flour, 150 g of butter, a pinch of salt and a little water to soak.
  • 2.   Peel and mince the onions. In 50 g of gently heated butter, soften and brown without coloring them any further.
  • 3.   At the same time, heat 50 g of butter in a saucepan and pour in the flour: mix and leave for a few moments to have a smooth and frothy mixture then pour in the milk without stopping to stir.
  • 4.   Season and let thicken for a few minutes after boiling.
  • 5.   Remove the sauce from the heat and add the egg yolks. Pour the blond onions into the sauce and check its seasoning.
  • 6.   Line the pie pan with the dough to darken: fill it with the onion mixture which should only half fill it: scatter the bacon evenly on top.
  • 7.   Cover everything with the rest of the dough, closing the edges well, making a small hole in the center.
  • 8.   Bake in a medium oven (180-200 ° C) for 45 minutes cooking and serve very hot.
