Instructions
1. Cut the pumpkin and potatoes into 2 cm cubes. Cut the chorizo slices in half.
2. Heat olive oil in a large sauté pan. Add the pumpkin, chorizo, and potatoes. Cover and cook over medium heat for 15 minutes, stirring regularly. The pumpkin should not be overcooked.
3. Grease a baking dish with olive oil and pour in the mixture. Spread evenly. Let it cool for 15 minutes.
4. Drain the mozzarella and pat dry with paper towels. Cut into thin slices, then cut each slice in half. Place the mozzarella on top of the dish. Sprinkle with Herbes de Provence.
5. Immediately cover with plastic wrap if preparing in advance, and store in a cool room.
6. Preheat the oven to 200°C (400°F) with the fan on. Once the oven is hot, bake for 20 minutes. Serve immediately.
