Sweet passion fruit sauce sea bream skewers

Instructions

  • 1.   Marinate the fish cubes in lemon juice for about 1 hour. Thread 3 to 4 fish cubes onto wooden skewers. Use 2 skewers per person.
  • 2.   In a hot, lightly greased pan, cook the skewers over medium heat (th 6) until golden brown on all sides. It should take about 3 minutes per side. The fish should remain tender. Once cooked, set aside and discard any excess oil.
  • 3.   Using a spoon, press the pulp of the passion fruits through a sieve to collect the juice without the seeds. If the fruits are not very juicy, add a little water to extract their juice. Deglaze the pan with the juice.
  • 4.   Pour the resulting sauce into a small saucepan and continue cooking over low heat for 2 minutes. Cooking helps reduce the acidity of the fruits. Pour the heavy cream into the passion fruit juice and let it thicken over very low heat. Add honey (just to balance the acidity of the fruits) and adjust the seasoning.
