Smoked Duck Breast Omelette

Instructions

  • 1.   Cut the slices of smoked duck breast into strips, then fry them with 1 tablespoon of oil in a medium heat skillet.
  • 2.   Peel and finely slice the onions. Add them to the bacon.
  • 3.   Peel, wash, and dice the potatoes. Add them to the skillet and cook over medium heat for 20 minutes, stirring often.
  • 4.   In a bowl, crack the eggs, season with salt and pepper. Beat them to make an omelette.
  • 5.   Grease a second non-stick skillet and pour the eggs into it. Cook over low heat according to your preference.
  • 6.   Towards the end of cooking, pour the cream in the center of the omelette, then cover with the potato mixture before folding it.
  • 7.   Garnish with chopped parsley and serve.
