Salmon and leek crumble with companion

Instructions

  • 1.   Put 150 grams of flour in the companion bowl fitted with the kneading crusher.
  • 2.   Add 100 grams of softened butter to the companion bowl.
  • 3.   Add 50 grams of grated Parmesan cheese to the companion bowl.
  • 4.   Put on the lid with the cap.
  • 5.   Mix for 7 sec/speed 6.
  • 6.   Set aside in a dish.
  • 7.   Preheat the oven to 180°C.
  • 8.   Add 600 grams of leeks cut into pieces to the companion bowl fitted with the Ultrablade.
  • 9.   Put on the lid with the cap.
  • 10.   Mix for 5 sec/speed 5.
  • 11.   Replace the Ultrablade with the mixer and add 50 grams of butter to the companion bowl.
  • 12.   Put on the lid with the cap.
  • 13.   Cook for 10 min/100°C/speed 3.
  • 14.   Add 80 grams of heavy cream to the companion bowl.
  • 15.   Add a pinch of pepper to the companion bowl.
  • 16.   Put on the lid with the cap.
  • 17.   Cook for 4 min/100°C/speed 3.
  • 18.   Spread 500 grams of smoked salmon in an ovenproof dish.
  • 19.   Transfer the leek mixture over the salmon.
  • 20.   Cover everything with the crumble.
  • 21.   Put in the oven in convection mode for 30 min at 180°C.
  • 22.   Serve hot.
