1. 1. Cut your cleaned chicken into pieces at the joints. Start with the hips, separate them from the thighs, then the shoulders and wings. Then bone the chicken breast and cut it into pieces. Finish with the carcass. Open it in half from bottom to top and cut suitable pieces according to your preference.
2. 2. Put 1 to 2 tablespoons of sunflower oil in a pot and heat for a few seconds. Then add the chicken pieces one by one, starting with the larger pieces. Let them brown on each side, except for the chicken breast pieces (do not overcook them).
Once done, remove the chicken pieces and set aside.
3. 3. Prepare the spices.
Slice the onions thinly, blend the garlic and ginger together, and dice the tomatoes.
4. 4. Sauté the onions in the pot. When they start to brown, add the garlic, ginger, thyme, tarragon, turmeric, salt, and pepper. Mix everything together, then add the chicken pieces. Stir everything together, then add the diced tomatoes. Cover the pot with the lid and let the tomatoes soften. Then add water (the water should cover the chicken).
5. 5. Let it cook for about 30 minutes until the water is reduced and becomes a sauce. Add salt if needed, as the water will reduce the saltiness during cooking. (The more water you add, the more tender your chicken will be, but do not exceed the height of the chicken).
6. 6. Your chicken curry is ready to be served. Add parsley according to your preference. Serve it with white rice.
