Harira (Morocco)

Instructions

  • 1.   Put olive oil in a pressure cooker (about 4 tablespoons), discard all the ingredients (except the parsley, cilantro and angel hair) and cover with water. Cook for 20 to 30 minutes (depending on the size of the meat cubes) from the whisper of the valve.
  • 2.   Thicken the soup by adding the diluted preparation: a little flour and the concentrated tomato diluted in water, then add the parsley, coriander and angel hair.
  • 3.   It's ready and it's very good! When serving each guest, add a squeeze of lemon to their plate.
