Instructions

  • 1.   Peel and thinly slice the sweet potato.
  • 2.   Cut the chicken breast into cubes.
  • 3.   Mix everything in a bowl with the basil cut with scissors, curry, and coconut milk.
  • 4.   Cover with plastic wrap and cook for 15 minutes at 850 watts in the microwave.
  • 5.   Season with salt and pepper and serve with a drizzle of olive oil.
