Salmon Crumble with Cream

Instructions

  • 1.   - Crush the crackers, finely chop the garlic and parsley. Reserve in a bowl.
  • 2.   - Cut the salmon into strips in a dish, drizzle with white wine and add the shallot. Marinate for 20 minutes.
  • 3.   - Reduce the fish stock and heavy cream by half in a saucepan. Pour in the cornstarch diluted in water, stir to thicken. Add the parsley and adjust the seasoning.
  • 4.   - Preheat the oven to 425°F. Pour the sauce into a buttered dish and arrange the drained fish on top. Sprinkle with the crushed crackers, garlic, and parsley.
  • 5.   - Dot with butter.
  • 6.   - Bake for 30 minutes until golden brown and serve immediately.

  • 20 cl of liquid fresh cream
  • 10 cl of white wine
  • 2 teaspoon of Cornstarch
  • 5 rusks

  • parsley (according to taste)
