Hachis Parmentier with Companion

This dish is named after the pharmacist Antoine Parmentier who, convinced that the tuber could effectively combat food shortages, had Louis XVI taste it. A family and traditional dish in many countries, it is also economical as it allows you to use up leftover meat from a roast or a pot-au-feu, for example. Hachis Parmentier can be entirely made with the Companion, by preparing the meat mixture on one side and the mashed potatoes on the other.

Instructions

  • 1.   Place the quartered yellow onion in the Companion bowl with the ultrablade.
  • 2.   Add the garlic cloves to the Companion bowl.
  • 3.   Place the lid with the cap.
  • 4.   Mix 5 sec/speed 7.
  • 5.   Replace the ultrablade with the mixer and scrape the sides of the bowl with the spatula.
  • 6.   Add the diced butter to the Companion bowl.
  • 7.   Place the lid with the cap.
  • 8.   Cook 4 min/90°C/speed 3.
  • 9.   Put back the ultrablade and add the diced beef to the Companion bowl.
  • 10.   Add the fresh parsley (leaves only) to the Companion bowl.
  • 11.   Add salt (adjust to taste) to the Companion bowl.
  • 12.   Add pepper (adjust to taste) to the Companion bowl.
  • 13.   Place the lid with the cap.
  • 14.   Mix 15 sec/speed 9.
  • 15.   Replace the ultrablade with the mixer and scrape the sides of the bowl with the spatula.
  • 16.   Place the lid with the cap.
  • 17.   Cook 9 min/90°C/speed 3.
  • 18.   Transfer to a buttered gratin dish.
  • 19.   Preheat the oven to 220°C.
  • 20.   Add the whisk.
  • 21.   Place the sliced potatoes in the Companion bowl.
  • 22.   Add the semi-skimmed milk to the Companion bowl.
  • 23.   Add salt (adjust to taste) to the Companion bowl.
  • 24.   Add pepper (adjust to taste) to the Companion bowl.
  • 25.   Add ground nutmeg to the Companion bowl.
  • 26.   Place the lid with the cap.
  • 27.   Cook 30 min/100°C/speed 4.
  • 28.   Add the diced butter to the Companion bowl.
  • 29.   Place the lid with the cap.
  • 30.   Mix 15 sec/speed 5.
  • 31.   Cover the meat with the mashed potatoes.
  • 32.   Sprinkle grated Emmental cheese on top.
  • 33.   Bake in the oven for 15 min at 220°C.
