Simple Stuffed Tomatoes

Stuffed tomatoes are gems from our childhood that remind us of the taste of good things and family meals, in the sun or despite the rain. Very affordable to cook, here is a basic version for busy cooks and beginner chefs. Customize with herbs, spices, dried fruits, and anything else you desire.

Instructions

  • 1.   While your oven preheats to 210°C (th.7), cut the top off each tomato and set aside each cap. Using a spoon, hollow out 2/3 of the flesh to create a sort of bowl that can hold the stuffing.
  • 2.   In a bowl, start by whisking together (with a fork) half of the milk and the eggs. Then add the tomato pulp and seeds (feel free to blend them with a little oil), as well as the crumbled bread or breadcrumbs. Add the remaining milk to soak everything, and mix. Finally, add your ground meat, crumbling it as finely as possible with your fingers. Season with salt and pepper, and mix everything with a spoon or by hand.
  • 3.   Fill the tomatoes with the stuffing, place them in a dish (ideally on top of a wire rack that will allow them to drain), drizzle them with olive oil, and bake for about 45 minutes, adding the caps towards the end of cooking. During cooking, take a saucepan and cook the rice, couscous, or grains that you have planned as a side dish.
  • 4.   After 30 minutes of cooking, heat water to cook the rice.
