Pork tenderloin with zucchini

Instructions

  • 1.   Peel the zucchini. Cut them into chunks or large sticks, about 5cm in length.
  • 2.   Sear the pork tenderloin in a Dutch oven with a mixture of olive oil and butter.
  • 3.   Once it is nicely browned, add the zucchini, crushed garlic, raisins, bouquet garni, and chicken broth. Season with salt and pepper.
  • 4.   Mix well, cover, and let cook for 25 minutes over low heat.
  • 5.   Slice the pork tenderloin into thin slices. Arrange it on a large platter surrounded by the zucchini and raisin garnish, and serve it with steamed couscous.
