Light Stuffed Zucchini

Instructions

  • 1.   Preheat your oven to 200°C (th. 7). Wash the zucchini and cut them in half lengthwise. Using a spoon, hollow out each zucchini half and set aside the flesh. Peel the onions and garlic. Then, slice the onions and chop the garlic. Set aside.
  • 2.   In a pan, sauté the zucchini flesh with the sliced onions and chopped garlic in 2 tablespoons of olive oil, stirring occasionally. Add the ground beef and sauté everything together, stirring again. Sprinkle with thyme and chopped basil, then season with salt and pepper. The stuffing is ready.
  • 3.   Fill the zucchini halves with the stuffing and place them in an ovenproof dish. Pour the tomato sauce over the zucchini. Bake for 40 minutes at 200°C (th. 7). A few minutes before the end of the cooking time for your light stuffed zucchini, sprinkle with Parmesan cheese and return the dish to the oven under the broiler for a few more minutes. Meanwhile, bring a large volume of water to a boil. Cook the rice for 8 to 10 minutes according to the time indicated on the package. Serve the light stuffed zucchini with the rice and garnish with parsley sprigs.
