Melon Salad

Instructions

  • 1.   Cut the melons in half, carve them into lace-like patterns, remove the seeds, and scoop out melon balls using a melon baller. Set aside.
  • 2.   Toast the pumpkin seeds in a dry pan. Set aside.
  • 3.   Cut the cherry tomatoes into quarters.
  • 4.   Mix the three ingredients in a dish, then fill the melon halves with the mixture.
  • 5.   In a shallow dish, mix lemon juice, pumpkin seed oil, chopped basil leaves, salt, and pepper to taste. Drizzle the dressing over the salad.
  • 6.   Serve chilled.
  • 7.   This salad pairs well with grilled dishes or can be served as an appetizer.
