Instructions

  • 1.   Finely chop the onions and sauté them in a frying pan with olive oil. Slice the peppers very thinly and add them to the frying pan. Slice the tomatoes and add them as well. Season with salt and pepper. Cover and simmer. Add a little more olive oil during cooking if desired.
  • 2.   In another pan, sauté your merguez sausages. Once cooked, cut the merguez into 4 pieces and add them to the vegetables. Let simmer on low heat to infuse the vegetables with the juices from the merguez... (that's why there's no need to use chili pepper in the recipe).
  • 3.   Once everything is cooked, add the coriander. It resembles ratatouille or piperade. You can also add one egg per person on top...
  • 4.   It's delicious! Enjoy your meal!
