Sun-dried vegetable and cured ham timbale (microwave)

Instructions

  • 1.   * Step 1: Cook the vegetables...
  • 2.   Grill (or sauté in olive oil) the eggplants (previously sliced thinly lengthwise). Set aside.
  • 3.   Slice the zucchinis and sauté them as well. Set aside.
  • 4.   Do the same with the tomatoes, adding garlic and basil. Be careful not to overcook them and turn them into sauce: they should remain in pieces.
  • 5.   * Step 2: Assembly...
  • 6.   Line 4 ramekins with thin strips of cured ham.
  • 7.   In fact, the idea is to cross the strips at the bottom of the ramekin in a way that creates a sort of asterisk or star, with the branches going up along the sides of the ramekin (am I clear?), so that when you unmold the timbales, the ham holds the preparation without completely covering it. This way, the different layers of the timbale will be visible.
  • 8.   On top of the lining, add the eggplants, pressing them down firmly, then the tomatoes, followed by the mozzarella, and finally the zucchinis.
  • 9.   Microwave for one to two minutes: the vegetables are already cooked, it's just a matter of melting the mozzarella or heating the ricotta, and slightly cooking the ham to infuse the flavors.
  • 10.   Unmold and enjoy...
