Mexican-style Red Beans

Instructions

  • 1.   1. Peel and chop the garlic and shallot. Drain and rinse the red beans. Heat the oil in a non-stick skillet, sauté the garlic and shallot. Sprinkle with cumin, cocoa, chili, and sugar.
  • 2.   2. Pour in the tomato sauce, mix and cook for 2 minutes over low heat, stirring occasionally. Adjust the seasoning with salt, according to desired taste.
  • 3.   3. Add the red beans, mix and cook for an additional 2 minutes over low heat while stirring. Incorporate the diced shoulder and sprinkle with parsley. Serve hot.

  • 2 teaspoon of olive oil
  • 1 teaspoon of ground cumin
  • 1 g of Cayenne pepper
  • 75 g of white ham
  • 1 teaspoon of parsley

  • 200 g of tomato coulis
