Shrimp and Wheat Berry Salad

Instructions

  • 1.   Cook the wheat berries in a pot of salted boiling water. After 5 minutes, drain and rinse under cold water in a colander to stop the cooking process. Set aside.
  • 2.   Rinse the red beans. Peel, wash, and dry the treviso lettuce leaves. Cut them into thin strips. Cut the tomatoes. Add the mint and black olives.
  • 3.   Emulsify the oil, vinegar, and lemon juice in a salad bowl. Add the wheat berries, beans, shrimp, and other ingredients. Season with salt and pepper. Serve immediately.

  • 240 g of peeled shrimp

  • 3 tomatoes
  • 12 black olives
  • 10 leaf of fresh mint
