1. To make parsley butter: finely chop a bunch of parsley and mix it with softened butter (at room temperature), 250g for one bunch.
2. Preheat the broiler in the oven.
3. Lightly brush the lamb chops with a little oil.
4. Place them on the broiler pan in the oven and cook for 2 to 3 minutes on each side, with the oven door open depending on the thickness of the chops.
5. Before serving, season with salt and pepper. Place a small knob of parsley butter on each chop.
