1. Peel and slice the onions.
2. Clean, remove the seeds, and cut the bell pepper into strips.
3. Clean and cut the tomatoes into quarters.
4. Peel, remove the seeds, and cut the zucchini into strips.
5. Preheat the oven to 200°C (400°F).
6. Season the turkey thighs with salt and pepper, then place them in an oven-safe dish.
7. Add the vegetables and thyme on top.
8. Drizzle with a little olive oil, then pour a glass of water into the bottom of the dish.
9. Bake for 40 minutes, flipping the turkey thighs halfway through cooking.
10. Serve immediately after removing from the oven.
