Mediterranean Rice Salad

Instructions

  • 1.   Cook your rice according to the instructions on the packaging or as you normally would.
    Once cooked, rinse under cold water and let it cool.
  • 2.   Cut the tomato, onion, and radishes into pieces.
    Chop the oregano, parsley, and chives.
  • 3.   In a bowl, mix the juice and zest of the lemon, minced garlic, herbs, and a drizzle of olive oil.
    Pour over the cooled rice and mix.
    Add the vegetables and crumbled feta cheese and mix.
  • 4.   Season to taste and serve or refrigerate.

Notes & Suggestions

  • You can replace tuna with oil-packed sardines.

  • 1 tomato
  • ½ red onions
  • 10 radishes
  • ½ feta
  • 1 cup of canned tuna in water (drained weight)
  • 1 lemon
  • 1 garlic clove
  • 1 teaspoon of dried oregano
  • 1 handful of fresh parsley
  • 3 stalk of chives
  • salt (according to taste)
  • pepper (according to taste)
