Cod Chiquetaille

Traditionally, chiquetaille (which means shredded) is prepared with cod. It can also be made with smoked herring or chicken. It is typically served in a sandwich, bokit, salad with cucumber and avocado, or simply on small toasts as an appetizer. Grated carrot can be added to the preparation.

Instructions

  • 1.   Method 1
  • 2.   Soak the cod in a large amount of water overnight.
  • 3.   Bring to a simmer for 10 minutes. Start cooking with cold water.
  • 4.   Drain and pat dry the cod with paper towels.
  • 5.   Separate the flesh from the skin and bones. Flake with a fork.
  • 6.   Finely chop onion, garlic, scallions, parsley, chili pepper, and add to the cod flakes.
  • 7.   Add vinegar and oil and mix well. Adjust seasoning.
  • 8.   Method 2
  • 9.   Brush the cod with a dry brush to remove excess salt.
  • 10.   Grill for 10 minutes (using the broil setting in the oven, barbecue, or stovetop flame).
  • 11.   Once the cod is grilled, soak it for a minimum of 4 hours in a bowl of cold water. Remember to change the water once.
  • 12.   Drain and pat dry the cod with paper towels.
  • 13.   Separate the flesh from the skin and bones.
  • 14.   Continue with the rest of the recipe as in method 1.

  • ½ vegetarian peppers
  • 2 stalk of chive
  • 2 stalk of parsley
  • 3 tablespoon of sunflower oil
  • 1 tablespoon of lime
  • 1 large chili paste
  • salt (according to taste)
  • pepper (according to taste)
