One pot pasta Colombo style

Instructions

  • 1.   Cut the chicken into pieces. Chop the onion and garlic, and cut the eggplant and zucchini into pieces.
  • 2.   In a pot, heat a drizzle of oil.
  • 3.   Add the tempering spices (without burning them) and then the chicken.
  • 4.   Let it cook for 5 minutes, then add the onion and garlic.
  • 5.   Continue with the pasta, vegetables, Colombo powder, and broth.
  • 6.   Cover and cook over medium heat for 10 minutes, stirring frequently. Add the cream, and continue cooking for 5 minutes.
  • 7.   Check the pasta's doneness and adjust the cooking time and liquid as needed.
  • 8.   Adjust the seasoning and sprinkle with chopped parsley.

  • 400 g of chicken breast
  • 400 g of penne
  • 2 tablespoon of curry powder
  • 1 liter of chicken broth
  • 4 stalk of parsley
  • 10 cl of heavy cream
  • 1 eggplant
  • 1 zucchini
  • 1 medium onion
  • 2 garlic cloves
  • 1 teaspoon of russet seed
  • salt (according to taste)
  • pepper (according to taste)
