Instructions
1. Pepper Cream:
- Preheat the oven to 200°C (400°F) on the broil setting.
- Cook the peppers on each side in the oven for about 25 minutes until the skin blackens.
- Place the peppers in a plastic bag for 5 minutes. Remove the skin and seeds.
- Blend the peppers with fresh goat cheese, sun-dried tomatoes, salt, and pepper.
2. Reheat the galettes in a crepe pan or large skillet with a little butter.
3. Fill the galette with the pepper cream, arugula, and prosciutto.
