Instructions

  • 1.   Wash and soak the tripe in water with bicarbonate.
  • 2.   Meanwhile, cut the salted pork (pig tail, bacon) into pieces and soak a nice piece of andouille sausage (optional Lydia touch).
  • 3.   Prepare the vegetables: boucoussou peas and angole peas, malanga, sweet potato, breadfruit, white cabbage, poyos, giraumon. Cut everything into small pieces.
  • 4.   Meanwhile, prepare small dumplings (small flour balls) with flour mixed with water, salt, and a little oil. Set aside.
  • 5.   Blanch the salted pork in a large pot for a few minutes.
  • 6.   In another large pot (the one that will be used for the final preparation), cook the tripe for about an hour. Add the salted pork, cabbage, peas, and aromatic garnish (made of chives, garlic, and a vegetarian chili), plus 3 cloves.
  • 7.   Cook everything for about twenty minutes, partially covered. Continue by adding malanga, sweet potato, breadfruit, poyos, giraumon, andouille sausage... And let it simmer for an hour on low heat.
  • 8.   Then add the small dumplings and continue cooking for 10 minutes. Finally, add the juice of two small lemons, grated garlic, and vegetarian chili. Another 15 minutes on the heat.
  • 9.   Taste and adjust the seasoning. It's up to each person's taste!

  • ½ small breadfruit
  • ½ small white cabbage
  • 500 g of West Indian pumpkin
  • 1 kg of poyos
  • 3 small clove
  • 4 garlic cloves
  • 2 small chive
  • 1 small vegetarian pepper
  • 1 small lime
  • 2 medium carrot (optional)
  • 1 small country pig (optional)
  • Pour le dombré :
  • 500 g of flour
  • salt (according to taste)
