Instructions
1. Prepare the shrimp marinade: Peel and finely chop the shallot, ginger, and garlic. Wash and chop the vegetarian peppers and parsley. Add 1 tablespoon of oil, the juice and zest of one lime.
2. Put the shrimp in a tightly sealed container, add the marinade and mix. Refrigerate for 20 minutes.
3. Bring a pot of salted water to a boil and cook the rice as indicated on the package. Drain and rinse with cold water. Set aside.
4. Heat a drizzle of oil in a pan. Add the shrimp and sauté over medium heat for 5-8 minutes. Add the marinade. And cook for another 5 minutes. Set aside.
5. Wash the bell pepper and tomatoes and cut them into cubes.
6. Peel the cucumber, pineapple, and avocado and cut them into cubes.
7. In a large salad bowl, combine the rice, vegetables, pineapple, and shrimp. Mix well.
8. Prepare the vinaigrette by mixing all the ingredients.
9. Serve the rice salad with the vinaigrette.
