Green PESTO SANDWICH

Preparation time: 10 minutes

Instructions

  • 1.   Prepare pesto:

    1. Blend cashews with olive oil, mint, and parsley.


    2. Season with a little lemon juice, salt, and pepper.


    3. Mash feta cheese into the mixture.

  • 2.   Cut the baguette (if it's a traditional baguette, cut in half; if it's a white baguette, cut into thirds - but it depends on your preference).
    You should have one sandwich per person.
    Spread the pesto on the bread.
  • 3.   Slice the avocado thinly and cut the cucumber into thin rounds.
  • 4.   Assemble the sandwich:

    1. Bread slice + pesto


    2. Baby greens


    3. Avocado slices


    4. Cucumber rounds


    5. Chicken ham


    6. Baby greens

  • 5.   Cut the sandwiches in half (if you are serving two people, this will make four small sandwiches).
  • 6.   Serve with a salad of raw vegetables: grated carrots, leftover avocado and cucumber. Add a little feta cheese to the salad.

  • 1 tradition baguette
  • 1 handful of young shoot
  • ½ avocados
  • ½ cucumbers
  • 60 g of feta
  • 4 slice of chicken ham
  • 50 ml of olive oil
  • ½ limes
  • 3 carrots
  • 50 g of cashew nut
  • 5 leaf of fresh mint
  • 3 tablespoon of lemon juice
  • salt (according to taste)
  • pepper (according to taste)
  • parsley (according to taste)
