Season with a little lemon juice, salt, and pepper.
Mash feta cheese into the mixture.
2. Cut the baguette (if it's a traditional baguette, cut in half; if it's a white baguette, cut into thirds - but it depends on your preference).
You should have one sandwich per person.
Spread the pesto on the bread.
3. Slice the avocado thinly and cut the cucumber into thin rounds.
4. Assemble the sandwich:

Baby greens
Avocado slices
Cucumber rounds
Chicken ham
Baby greens
Bread slice + pesto
5. Cut the sandwiches in half (if you are serving two people, this will make four small sandwiches).
6. Serve with a salad of raw vegetables: grated carrots, leftover avocado and cucumber. Add a little feta cheese to the salad.
