Lentil and Salmon Stir-Fry with Coconut Milk

Instructions

  • 1.   Slice the onion and bell pepper.
  • 2.   In a heated pan, drizzle some olive oil and sauté the onion for 5 minutes with a pinch of salt and 1 teaspoon of curry powder.
  • 3.   Thoroughly wash the lentils (uncooked) before adding them to the pan. Add the coconut milk and a little water, until it reaches 1 cm above the lentils.
  • 4.   Add the bell pepper slices.
  • 5.   Cover and let simmer for 15 minutes, until the liquid is absorbed.
  • 6.   Slice the salmon fillets. Add them to the mixture towards the end of cooking. Season with salt and pepper, and mix well.

Notes & Suggestions

  • It is possible to use salmon bacon instead of smoked salmon slices.
