Instructions

  • 1.   Sauce:
    Ingredients starting from mayonnaise:
    Prepare the white sauce so that it is nice and fresh. Pour all your ingredients into a blender and blend. Pour the mixture into a jar and refrigerate. In a bowl or container, mix the flour and sugar. Add the egg yolks, set aside the egg whites. Pour in the beer, salt, and mix everything together.
  • 2.   Mix the water and milk and pour the mixture into the previous preparation. Let the batter rest in the fridge for 30 minutes. Meanwhile, prepare the sweet potato fries following the instructions in my recipe. Halfway through the cooking time of the sweet potatoes, heat oil over medium heat to fry the fish fritters. Beat the egg whites until stiff peaks form, then fold them into the batter without breaking the whites. Rinse the fish, season with salt and pepper. Cut the fillets into rectangular or square pieces. Sprinkle with flour.
  • 3.   Dip each piece into the batter and cook them in the oil. Flip them after 3-5 minutes. Drain them on paper towels. Serve your fish fritters with sweet potato fries and pour the white sauce into a separate bowl. Enjoy your meal.

  • 200 g of flour
  • 2 tablespoon of sugar
  • 4 tablespoon of beer
  • ½ teaspoon of salt
  • 6 tablespoon of milk
  • 6 tablespoon of water
  • 2 eggs
  • 4 hake fillets
  • 1 handful of flour
  • 3 sweet potatoes
  • 200 ml of mayonnaise
  • 4 garlic cloves
  • 1 teaspoon of parsley
  • 1 teaspoon of fresh tarragon
  • 1 teaspoon of chopped pickles
  • 1 teaspoon of caper
  • 1 small shallot
  • 2 ml of Worcestershire sauce
  • salt (according to taste)
  • pepper (according to taste)
