Instructions
1. Finely chop the garlic and parsley. Cut cubes from the bacon.
Mix the garlic, parsley, salt, pepper, and bacon cubes by hand.
2. Make the alouettes by placing a slice of beef shoulder on a work surface and placing a small mound of bacon mixture on top.
3. Close the beef shoulder with string or a toothpick.
4. Place the alouettes in the Cookeo pot and add the wine, veal stock, and tomato paste.
