Beef Tartare

Instructions

  • 1.   Wash your parsley and finely chop it.
  • 2.   Peel your shallot or onion (according to your taste) and finely dice it.
  • 3.   In a bowl, mix your meat with an egg yolk, mustard, and Tabasco. To avoid any surprises and excessive heat, add the mustard and Tabasco gradually and add more if necessary.
  • 4.   Add the parsley and shallot. Be careful to evenly distribute the shallot to avoid any unpleasant surprises when tasting with bites that have a strong shallot flavor.
  • 5.   Season the mixture with salt and pepper to your liking.
  • 6.   Once your mixture is well combined, shape your steaks using a cookie cutter and then shape them further with a spoon. If you don't have a cookie cutter at home, simply form a ball and flatten it with your spoon.
  • 7.   Chill your tartare in the refrigerator for half an hour.
