1. Sauté the finely minced onion in a drizzle of olive oil for 5 minutes.
2. Add the sliced leeks and continue cooking for 10 minutes.
3. Add the sausages in small pieces and let simmer for another 5 minutes.
4. Season with salt and pepper.
5. In a mug, mix cold milk and cornstarch. Pour this mixture over the leeks and stir. Stop cooking. Set aside.
6. Fill the brick pastry sheets like a cigar. Place 2 tablespoons of the mixture in the center of the sheet, forming a rectangle. Fold the sides and roll the sheet.
7. Brush with beaten egg or melted butter, then bake at 200°C (400°F) for 15 minutes.
