Instructions

  • 1.   Bring a pot of salted water to a boil. When the water is boiling, plunge the tips of the green asparagus and cook them for 8 to 15 minutes, depending on their size.
  • 2.   At the end of cooking, plunge the tips of the green asparagus into a bath of ice water to stop their cooking and preserve their beautiful color. Drain them carefully.
  • 3.   Wrap each tip of green asparagus in a slice of cured ham.
  • 4.   Arrange your rolled asparagus with cured ham in appetizer spoons.
  • 5.   In a mortar, lightly crush the pink peppercorns with a pestle.
  • 6.   In a bowl, mix together the honey, lime juice, olive oil, and crushed pink peppercorns. Season with salt to taste.
  • 7.   Reserve your appetizer spoons of rolled asparagus with cured ham in the refrigerator until ready to serve.
  • 8.   When serving your appetizer spoons, drizzle your rolled asparagus with cured ham with the honey and lime sauce.
