Garlic and Rosemary Leg of Lamb

Instructions

  • 1.   Preheat the oven to 425°F. Prepare the leg of lamb by removing the fat from the meat with a knife, so that the flesh is exposed.
  • 2.   Make a paste with the fat, crushed garlic, stripped rosemary leaves, and coarse salt.
  • 3.   Massage the paste into the flesh of the leg of lamb, ensuring it is well coated.
  • 4.   Place in the oven and baste every 15 minutes with a mixture of hot water and fat.
  • 5.   For those who enjoy confit garlic: remember to place a few unpeeled garlic cloves at the bottom of the dish.
