Buckwheat Spinach and Goat Cheese Galette

Instructions

. Make the dough by mixing flour, water, and salt.
Let it rest in the refrigerator for 2 hours.

. Cook the 8 galettes.

. Cook the spinach for 15 minutes over low heat.

. Spread the melted spinach on the galette. Fold it. Add slices of goat cheese on top.
Cook in a pan or in the oven until the cheese melts.

. Serve with a lamb's lettuce salad and smoked salmon.
