Scallop and Pea Fricassee
This recipe can also be made with scallops.

Instructions

. 1. In a preheated wok (or sauté pan), pour olive oil and sauté the onion. Add the peas and a glass of water. Let simmer for 5 minutes.

. 2. Then add the tomatoes, chopped sage, and scallops. Season and stir. Cover and let cook for about 10 minutes.

. 3. Pour into a serving dish. Enjoy immediately, garnished with fresh sage leaves.

. Replace the peas with small frozen peeled fava beans.
