Scallop and Pea Fricassee

This recipe can also be made with scallops.

Instructions

  • 1.   1. In a preheated wok (or sauté pan), pour olive oil and sauté the onion. Add the peas and a glass of water. Let simmer for 5 minutes.
  • 2.   2. Then add the tomatoes, chopped sage, and scallops. Season and stir. Cover and let cook for about 10 minutes.
  • 3.   3. Pour into a serving dish. Enjoy immediately, garnished with fresh sage leaves.
  • 4.   Replace the peas with small frozen peeled fava beans.

  • 600 g of pea
  • 450 g of scallop
  • 2 teaspoon of olive oil
  • 1 pinch of salt
  • 1 red onion
  • 2 tomatoes
  • 4 leaf of fresh sage
  • salt (according to taste)
  • pepper (according to taste)
