1. Preheat the oven to 180 °C (350 °F). Place the spinach in a glass baking dish with 100 ml of water and a pinch of salt, cover and cook for 3 minutes in the microwave (750 W). Drain and squeeze to remove all the water.
2. Reserve 1 teaspoon of flour for the pan. In a bowl, whisk the eggs with the remaining flour, the cream cheese, and then the milk until smooth. Season with salt, pepper, and sprinkle with nutmeg.
3. Grease and flour (using the reserved teaspoon) a 27 cm (10.6 inch) non-stick tart pan. Spread half of the batter, then half of the spinach, ham cubes, and grated cheese. Cover with the remaining batter. Sprinkle the remaining ham and grated cheese on top. Bake for 25 minutes. Let cool for 15 minutes. Unmold by flipping the quiche twice onto a dish. Cut into 6 slices.
