Jacket Potatoes with Bacon

Instructions

  • 1.   Quickly rinse the potatoes and cook them in a pressure cooker for 10-15 minutes. When they are cooked (a knife should easily go through), cut them in half. Remove the flesh, leaving the edges intact so that the potatoes hold their shape.
  • 2.   Mash the flesh with milk. Add the corn. Grill the bacon on high heat in a non-stick pan or under the broiler in the oven, then cut it into small pieces. Mix it into the potato mixture. Season with salt and pepper. Fill the potato halves with this mixture and serve immediately.

  • 1 pinch of salt
  • 1 pinch of pepper
  • 5 sprig of fresh chives
